The crust and topping for these simple Blueberry Crumb Bars are both made from the same mix, and the inside is filled with a tasty blueberry jam.
INGREDIENTS
SERVINGS: 9 LARGER BARS OR 16 SMALLER BARS– 1 cup (125 grams) all-purpose flour– 1/2 cup (50 grams) old-fashioned rolled oat– 1/2 cup (100 grams) brown sugar– 1/4 teaspoon salt– 1/2 cup (115 grams) cold unsalted butter– 2 cups (300 grams) fresh blueberrie– 1/4 cup (50 grams) granulated sugar– 1 tablespoon (15 ml) fresh lemon juice– 2 teaspoons cornstarch
INSTRUCTIONS
Preheat oven to 350°F. Wrap an 8-inch square baking pan in aluminum foil, leaving an overhang for easy removal. Spray nonstick cooking spray and set aside.

Mix flour, oats, brown sugar, and salt in a large bowl. Cut cold butter into small pieces and mix with a pastry cutter, fork, or hands until coarse crumbs. Save 1 cup of crumb mixture for topping.

Put the remaining crumb mixture in the baking pan and press it evenly.
Mix blueberries, sugar, lemon juice, and cornstarch in a large bowl. Blend everything.

Transfer blueberries from bowl to crust and spread evenly. Use the 1 cup of topping you saved on blueberries.

Topping should be lightly golden brown after 40–50 minutes at 350°F (mine takes close to 50).

Remove from oven and cool on a wire rack. Cool pan, remove foil, and slice into 9–16 bars.
