Homemade Tahini Oreo Cookies Recipe

Tahini oreo cookies are homemade! The classic dark cocoa cookie with salty, nutty tahini buttercream. These cookies are delicious with chocolate, nuts, salt, and sweetness.

Ingredient

Homemade Oreo Cookie – 1 ¾ c (210g) all purpose flour – 1 tsp cornstartch – ½ tsp baking powder – ½ tsp salt – ¾ c (170g) unsalted or unsalted butter, room temperature – ⅔ c (135g) granulated sugar – 1 tsp (5ml) vanilla extract – 1 (53-57g) large egg, room temperature – ½ c (48g) dutch process or black cocoa powder – 1 tsp espresso powder, sifted Tahini Buttercream Filling – ½ c (113g) unsalted butter, room temperature – ⅓ c (40g) tahini, well stirred – 1 tsp (5ml) vanilla extract – ½ - 1 tsp salt, to taste – 2 c (250g) powdered sugar

Mix the baking powder, cornstarch, all-purpose flour, and salt thoroughly by sifting and whisking them together. Put aside.

Mix the butter and sugar in a large bowl for 2-3 minutes on medium-high speed. Scrape sides.

Add the egg, vanilla, espresso powder, and cocoa powder and mix on low speed for 20–30 seconds to combine each.

Mix the ½ dry components with the wet on low speed until just incorporated. Scrape bowl sides and bottom. Mix the remaining ½ of dry with the wet.

Place dough on a big parchment paper. Divide dough into two equal pieces using a bowl/bench scraper or hands. Reserve a piece.

When the oven is ready: Set the oven's temperature to 350 degrees. Using parchment paper, line two large baking pans.

Remove cold dough "sheet". Put dough on parchment. Mix 2-3 teaspoons of cocoa powder in a small bowl for cookie or biscuit cutter dipping.

Bake cookies at 350F for 9-11 minutes. Brown margins. Unset centers may be lighter brown. Continue rolling, cutting, baking, and cooling dough until used.

Whisk tahini, vanilla, salt, and room-temperature butter for 4–5 minutes. Tilted bowls. Slowly and thoroughly combine ½ cup of sifted powdered sugar. Bowl rotates. Pureed buttercream.

With a little offset icing knife, spoon, cookie dough scoop, or piping bag tip, frost one cookie's bottom. Frost more cookie bottoms. Lightly press. Enjoy!
