Simple ingredients are used to make crispy baked onion rings that are much better for you than fried ones.
INGREDIENTS
SERVINGS: 4 SERVINGS– 2 large yellow onion– 1- quart low-fat buttermilk– 1/2 cup all-purpose flour– 1 teaspoon smoked paprika– 1/2 teaspoon salt or to taste– 1/4 teaspoon pepper or to taste– 2 large egg– 1 and 1/2 cups panko breadcrumb

INSTRUCTIONS
Remove onion ends and skin. Cut onions 1/2" rings. Save or discard smaller pieces. Rings to a 9x13 baking dish.

Step 1
Completely cover onion rings with buttermilk. Cover and refrigerate onion rings for 2 hours.

Step 2
Start with a 400-degree oven. Prepare two large baking sheets with parchment. Remove onion rings from fridge and set aside.

Step 3
Mix flour, smoked paprika, salt, and pepper in a small bowl. Beat eggs in a separate bowl and reserve. Add salt and panko breadcrumbs to another bowl.

Step 4
Once out of the buttermilk, coat the onion rings in flour, egg, and panko. Using more may require more panko bread crumbs. Boost the bowl if needed.

Step 5
Spray onion rings with nonstick cooking spray and arrange them on baking sheets in a single layer.

Step 6
Approximately 15 minutes at 400°F. Once out of the oven, flip onion rings and spray other side with nonstick cooking spray. Continue baking for 15 minutes.
