Lady finger Cookies are easy to make and perfect for coffee breaks! Soft, fluffy cookies are perfect for tiramisu, trifles, and more.
Ingredient
– 1 cup granulated sugar– 4 cups cake flour– 1 tablespoon baking powder– 1/4 teaspoon salt– 6 large egg– 1 cup vegetable oil– 1 tablespoon vanilla extract– 1/2 cup confectioner’s sugar

Preheat oven to 350ºF. Process sugar in a blender or food processor for 15 seconds until fine. A little powdered sugar.

Put flour, baking powder, and salt in a small bowl and set aside. Beat eggs and sugar in a mixer bowl on medium speed for 8 minutes until thick and pale.

Beat oil slowly until incorporated. Add vanilla and beat slowly for 30 seconds. Pause mixer to scrape bowl sides.
Add flour and beat for 1–2 minutes until smooth, stopping mixer to scrape bowl sides and bottom.

Grease 2 baking sheets or line with parchment.
Pour batter into pastry bag and pipe 3 1/2-inch logs on baking sheet 1-inch apart.

Wait 3 minutes after coating ladyfingers with confectioner's sugar. Sugar shines. Another sprinkle of confectioner's sugar. This gives ladyfingers their crispness.

Bake in batches (slide the first sheet into the oven after piping) for 7–8 minutes until puffy, lightly golden brown, and soft.

After cooling on a cooling rack, remove the ladyfingers from the baking sheet with a metal spatula (or parchment, if using). Sprinkle confectioner's sugar before serving.
