INGREDIENTS

For the cake:: – 2 1/2 cups (317 grams) all-purpose flour – 1 1/2 teaspoons baking powder – 1 1/2 teaspoons ground cinnamon – 3/4 teaspoon baking soda – 1/2 teaspoon fine salt – 2 sticks unsalted butter (227 grams), at room temperature – 1 cup (200 grams) granulated sugar – 1/2 cup (100 grams) light brown sugar – 1 teaspoon vanilla extract – 2 large eggs, at room temperature – 1/2 cup (113 grams) sour cream – 1 1/3 cups (300 grams) mashed overripe bananas, from about 4 medium banana – 1 1/4 cups miniature chocolate chip For the frosting:: – 2 sticks unsalted butter (227 grams), at room temperature – 1 cup (270 grams) creamy peanut butter – 1 teaspoon vanilla extract – 1/8 teaspoon fine salt – 2 1/2 cups (313 grams) powdered sugar, sifted – Chocolate chips, for garnish, optional

INSTRUCTIONS

Heat the oven to 350°F. Grease and flour two 8-inch rounds.Sift flour, cinnamon, baking powder, soda, and salt in a medium bowl.

Step 1

Butter and sugars are light and fluffy after 3 minutes of medium-high electric mixing. Add vanilla, then eggs one by one.

Step 2

Beat half the dry ingredients, then sour cream and bananas slowly. Beat in remaining dry ingredients. Add chocolate chips.

Step 3

Divide batter between pans. Bake cakes 35–40 minutes until golden brown and pulled away from edges. After 15 minutes, cool pans on racks.

Cool to freezing. Frosting cold cakes is easier. Even freeze the cake for 30 minutes.

Step 5

Mix butter and peanut butter on medium-high speed in an electric mixer until fluffy. Blend vanilla, salt, and powdered sugar until frosting is fluffy.

Step 6

Put one cake layer on a stand or turntable. Pipe a generous ring of frosting around the cake layer's top edge with a pastry bag and open tip for smooth coverage.

Step 7

Add frosting to the ring and spread evenly. Turn the other cake layer upside-down on frosting for a flat cake. Spread the remaining frosting on the cake and smooth the edges with an offset spatula.

Sprinkle cake bottom with chocolate chips. Serve or refrigerate for 2 days. Bring to room temperature an hour before serving.
