– 2 slices bacon– 1 tablespoon olive oil– 1 medium onion– 1 tablespoon Swerve Brown– 1 teaspoon salt– ½ teaspoon black pepper– 1 cup sour cream– ¾ cup shredded gruyere cheese– ⅓ cup mayonnaise– 1 tablespoon apple cider vinegar– ¾ teaspoon dried thyme– ⅛ teaspoon cayenne pepper– 1 tablespoon chopped parsley

Heat bacon in a large skillet until crisp. Leave the drippings in the pan and transfer to a paper towel-lined plate with a slotted spoon.

Lower the heat and add olive oil and onions. Add sweetener, salt, and pepper and stir frequently until onions are soft and caramelized. This can take 20 minutes.

Preheat oven to 400ºF. Mix sour cream, shredded cheese, mayonnaise, vinegar, thyme, and cayenne in a large bowl. To avoid greasiness, slotted spoon onions from pan to bowl!

Sprinkle the remaining cheese over the dip in a 16-ounce baking dish. Bake 15 minutes. Sprinkle chopped bacon and parsley on top and serve.
