This recipe for Chicken and Spinach Calzones is very simple, a little healthier than most calzones, and full of delicious flavor!
INGREDIENTS

– 2 Tbsp olive oil, divided– 1 cup diced onion (1 small onion)– 1 Tbsp minced garlic (2 cloves)– 1 lb. boneless skinless chicken breast– 10 oz. frozen chopped spinach, thawed and drained– ¾ cup ricotta cheese– ½ cup crumbled feta cheese– ¼ cup grated parmesan– 1 Tbsp chopped parsley– 2 large egg whites, divided– ½ tsp salt– ½ tsp pepper– ½ tsp red chili flake– 16 oz. whole wheat or multigrain dough
INSTRUCTIONS
Bake foil-lined sheets at 350.In a medium skillet over medium-high heat, add 1 Tbsp olive oil. Six-minute skillet onion softening.

Step 1
Add garlic and cook another minute. Onions and garlic in a medium bowl.Put chicken in skillet with remaining Tbsp olive.

Step 2
Cook chicken for 8-10 minutes until no longer pink and golden. Shred after cutting board cools.

Step 3
Add chicken, spinach, ricotta, feta, parmesan, parsley, one egg white, salt, pepper, and red chili flakes to the onion and garlic bowl. Blend well.

Step 4
Ovalize six equal-sized dough pieces on lightly floured surface.Use a pastry brush to brush the edges of each dough oval with the remaining egg white from a small bowl.

Scoop chicken/spinach mixture into dough center.Fold and press dough edges. Fork-edged baking sheet.Brown and crisp calzones in 15-20 minutes.
