Chickpea Cucumber Feta Salad Recipe 

This chickpea cucumber feta salad is a delicious summer salad that's easy to make. Vegetarians love it too. This makes it a hit at potlucks and picnics.

Salad – 1 can Chickpea – 1 cup Cucumber – 1 cup Tomatoe – 1/4 cup Olive – 1/2 cup Onions Red – 1 cup Feta Cheese – 1/2 cup Mint for garnish Salad Dressing – 4 tbsp Olive Oil – 2 tbsp Lemon Juice – 1 tbsp Vinegar – 1 tsp Salt – 1/4 tsp Pepper – 1/2 tsp Dijon Mustard

Drain canned chickpeas. Add sliced tomatoes, onions, cucumbers, and olives to chickpeas. Add crumbled feta to salad.
