Creamy Cucumber Salad recipe

Creamy cucumber salad cools off a hot summer day. Crispy cucumbers are tossed with acidic, garlicky, protein-packed Greek yogurt dressing.

Ingredient

– 2 English cucumber – Kosher salt – ¾ cup whole milk Greek yogurt – 2 tablespoons red wine vinegar – Zest and juice of ½ lemon – ¼ cup chopped fresh dill, stems removed, plus more for garnish – ½ to ¾ teaspoon garlic powder – Black pepper

Direction

Leave some cucumber skin to form stripes. Halve them lengthwise. Remove seeds with a metal spoon, then cut into ¼-inch slices crosswise.

Sprinkle salt over the cucumbers in a large colander. Mix thoroughly and drain in a clean sink for 20–30 minutes.

 Mix yogurt, red wine vinegar, lemon zest and juice, dill, garlic powder, and a sprinkle of salt and pepper in a large bowl. Store in the fridge.

Pat cucumbers dry with a paper towel when ready. Toss the cucumbers and onions in the yogurt mixture until coated.
