To prepare flank steak, mix lime juice, 2 Tbsp olive oil, minced garlic, chili powder, cumin, and ½ tsp salt in a large ziplock bag. Spread marinade evenly and refrigerate for 2 hours.

Step 1
Place flank steak on a hot grill or cast iron pan. Grill each side 3 minutes. After 1.5 minutes per side, rotate steak for crisscross grill marks.

Cool steak on cutting board. Anti-grain cut flank steak strips. Heat pan on medium with 1 Tbsp olive oil while steak cools.

Add onions, remaining ¼ salt, and ¼ tsp pepper, and cook for 5 minutes. Add sliced jalapeño and cook for 6-8 minutes until onions are browned.

Scrape pan. After lightly brushing one side with remaining olive oil, place tortillas oil-side down on pan over medium heat.

Add gorgonzola cheese, steak, onions, jalapeño, and more cheese. Cover with another tortilla, cook one minute, flip, and cook two.

Halfway through cooking, rotate tortillas for crisscross grill marks. Use remaining tortillas and filling. Mashed or sliced avocado on four pizza-cut quesadillas.
