Focaccia Bread Recipe

Everyone likes chocolate-covered strawberries, a great Christmas or Valentine's Day present. This recipe includes my best strawberry suggestions for optimal results!

– 1 ⅓ cups warm water (about 110°F to 115°F) – 2 teaspoons honey (13 grams) – 2 ¼ teaspoons active dry yeast (0.25 ounce package; 7 grams) – 3 ¼ cups all-purpose flour spooned & leveled (405 grams) – 1 ½ teaspoons fine sea salt – 6 tablespoons extra-virgin olive oil divided – Flakey or regular sea salt for topping – 1 tablespoon freshly chopped or dried rosemary

Mix honey and warm water in a big bowl. Sprinkle the yeast on top, gently stir, and let sit for 5–10 minutes until frothy. After the yeast foams, add flour and sea salt. Mix to form dough.

Hand-mix 2 tablespoons extra-virgin olive oil into dough. Cover and scrape dish sides with towel. Raise in warm place 30 minutes. Wet hands with cold water to avoid dough sticking.

Stretch one dough corner as far as it will go without tearing and fold it over. Repeat three more quarter-turns of the bowl to extend and fold all four corners.

Spread and fold the dough three times every 20 minutes while it rises in a warm spot undercover for an hour. Double-tsp extra virgin olive oil per 9x13 pan. Metal crackers focaccia.

Stretch dough in baking pan. Cover and let it relax for 10 minutes before stretching to fit the pan for easier stretching. Grease your hands with olive oil to prevent dough sticking.

Dough should rise for 45 minutes in a warm, covered place. Preheat oven to 450°F (230°C) when dough is almost done. Press cold water or oil into the dough to make dimples.
