Preheat the oven to 400F and line a large baking sheet with silicone. Move an oven baking rack to second-highest.

Mix coconut flour, sweetener, baking powder, and xanthan gum in a medium bowl. Set aside.

Melt cheese in 30 second increments on high in a large microwave-safe bowl until almost liquid. A rubber spatula should be used to mix the flour mixture and egg in the bowl.

Knead on the prepared baking sheet until cohesive. Add a tablespoon or two of coconut flour if the dough is sticky. Cover with a large parchment or waxed paper and roll the dough into a 12-inch circle.

Cut 8 even wedges with a pizza wheel or large sharp knife. Take 1 ½ tablespoons of almond paste and form a thin, 3-inch log. Roll the dough tightly around the almond paste at one wedge's wide end.

Pinch seams seal. Use remaining dough.Circle the baking sheet with croissants and curl the ends into crescents. Press sliced almonds on melted butter.

Place on rack and immediately lower oven to 350F.
Bake 18–25 minutes until golden and puffy. Dust with powdered sweetener after cooling.
