– 6 large egg– ⅓ cup water– 1 ½ teaspoon banana extract– ½ teaspoon vanilla extract– ½ cup plus 2 tablespoon coconut flour– ¼ cup Swerve Brown packed– ¼ cup collagen peptides – 2 teaspoon baking powder– ¼ teaspoon salt– 6 tablespoon butter melted– ¼ cup dark chocolate chips, sugar-free

Mix eggs, water, banana extract, and vanilla in a large blender. Mix well.

The coconut flour, sweetener, collagen peptides, baking powder, salt, and melted butter should be blended until smooth. Mix chocolate chips by hand.

Heat a large skillet or griddle on medium-low. Apply oil or butter lightly.

Take 3 tablespoons of batter per pancake and make them 3–4 inches wide. Cook for 3 minutes until the top has small bubbles and the bottom is set and golden brown.

Slide a thin spatula or pancake flipper under each pancake and flip quickly and carefully. Cook another 3–4 minutes until the second side is golden brown.
