Keto French Toast Casserole tastes just like your favorite brunch treat, but it has a lot less carbs. It's great for holidays and parties because you can make it the day before!
Ingredient
– 1 loaf Keto White Bread– ½ cup chopped pecan– 6 large egg– ¾ cup heavy whipping cream– ½ cup Swerve Brown – ¼ cup water– ⅓ cup collagen protein powder– 2 teaspoon vanilla extract– 1 teaspoon cinnamon

Slice and cube bread into ¾ inch pieces, then place on a baking sheet. Allow to dry overnight or in a 200ºF oven for 1-2 hours until dry to touch.

Apply grease to an 8x8 glass or ceramic baking dish and distribute bread cubes evenly. Sprinkle pecans.

Mix eggs, cream, sweetener, and water in a large bowl or measuring cup. Add the collagen protein powder and whisk vigorously until no clumps remain (or use an immersion blender).

Mix in vanilla and cinnamon.
Pour the egg mixture over the bread, wetting each cube. Wrap in parchment paper or plastic and weigh with heavy cans.

Refrigerate 1 hour or overnight to soak egg mixture into bread. To bake, preheat the oven to 325ºF. Remove the casserole from the fridge, cans, and plastic wrap, and let it stand at room temperature while the oven heats.

Cover casserole with foil and bake 30 minutes. Then remove the foil and bake for 15–20 minutes until the center is barely set. Remove and wait 15 minutes before serving.
