It's easy to make these oatmeal cookies for breakfast that taste like maple syrup. A tasty way to start the day.

– ½ cup flaked coconut– ½ cup sliced almond– ½ cup Swerve Brown– ⅓ cup collagen peptide– ½ cup almond butter– 1 large egg– 1 teaspoon maple extract– ½ tsp vanilla extract

Preheat the oven to 350F and line a large rimmed baking sheet with silicone.

Grind coconut and almonds into oat flakes in a food processor. Add sweetener and collagen and pulse again to combine.

Add almond butter, egg, and extracts to a large bowl and mix well. Roll 2 tablespoons per cookie into balls.

Press the mixture to ½ inch thickness on the prepared baking sheet. Bake 15–20 minutes until golden and firm.

Remove and cool on pan. The cookies may release a lot of grease during baking, but they will absorb it when they cool.
