Keto Pumpkin French Toast Sticks Recipe

Keto Pumpkin French Toast Sticks are the best fall breakfast! Sugar-free pumpkin spice batter coating tender almond flour bread, fried to perfection!

Keto Bread – 1 cup almond flour – ⅓ cup egg white protein powder – 2 tablespoon Swerve Sweetener – 2 teaspoon baking powder – ½ teaspoon salt – 3 large eggs, separated – 1 large egg  – 3 tablespoon avocado oil – 2 tablespoon water – ½ teaspoon cream of tartar Pumpkin French Toast Stick – 3 large egg – ¼ cup heavy whipping cream – 3 tablespoon pumpkin puree – 3 tablespoon powdered Swerve – 1 teaspoon pumpkin pie spice – ½ teaspoon vanilla extract – 2 tablespoon Butter or oil for the pan Cinnamon "Sugar" – 3 tablespoon Swerve Sweetener – ½ teaspoon cinnamon

Keto Bread To prepare, preheat oven to 325F and line the bottom of a 9x5 loaf pan with parchment paper. Avoid greasing the pan.

Mix almond flour, protein powder, sweetener, baking powder, and salt in a large bowl. Mix egg yolks, whole egg, oil, and water in a medium bowl.

Whisk the egg mixture into the dry ingredients until well combined. Beat egg whites and cream of tartar in another large bowl until stiff peaks form. Combine the egg whites with the batter until no streaks remain.

Spread batter in prepared pan and bake 40–50 minutes until top is risen, golden brown, and springs back when pressed. Cool completely in the pan after removing from the oven.

Use a sharp knife to loosen and flip the pan. Take off the bottom parchment. Cut into 12 even slices and dry overnight on a wire rack.

Then cut each slice into 3 sticks. Pumpkin French Toast Sticks. Whisk eggs, cream, pumpkin puree, sweetener, pumpkin pie spice, and vanilla in a large shallow bowl.

Place ¼ of the sticks in the pan without overcrowding. Cook the sticks for 1 minute per side until golden brown. Remove to a platter and repeat with remaining butter, batter, and sticks.

"Sugar" cinnamon Mix sweetener and cinnamon in a shallow dish. Roll sticks in coating. Serve warm with butter or keto syrup.
