What happens when Mediterranean flavours are added to Southern food? Pure magic. This recipe blends the classic prawn and grits with Mediterranean ingredients such as Greek spice, feta cheese, tomato and onion.
Ingredient
– 1 cup stone ground grit– 3 cups chicken broth– 1 cup whole milk– 4 ounces feta, crumbled, plus more to garnish– 1 red onion, diced– 1 cup tomato, diced– 3 cloves garlic, minced– 1 pound shrimp, peeled and deveined– 1 tablespoon Greek seasoning– ¼ cup Kalamata olives, chopped– Salt and pepper to taste

Add grits to boiling chicken broth. Cover and stir frequently for 15–20 minutes on low heat.

Add the milk and feta and simmer for 10 minutes to tenderise the grits.

Sauté the onion until softened, then add the tomatoes. After cooking the tomatoes, add the garlic and simmer until fragrant.

Cook the prawns for 3–4 minutes until pink and opaque. Add olives, Greek spice, and salt & pepper to taste.

Sprinkle the shrimp mixture over the grits in a bowl. You may add extra feta and parsley.
