Warm the oven up to 356 F/180 C.
Place parchment paper or silicone on top of a baking sheet.

Put peanut butter, butter, egg, and vanilla in a large bowl and mix them together. Beat it lightly until it's smooth.

Mix in almond flour, salt, and baking powder.Optional: Top cookie dough balls on the baking tray or add chocolate chips to the batter.

Place cookie scooped or hand-made dough balls on the baking tray. Separate by 2 inches.
