Small Batch Oatmeal Chocolate Chip Cookies Recipe

In about 30 minutes, these Small Batch Oatmeal Chocolate Chip Cookies are ready! They are simple to make and only need one bowl.

INGREDIENTS 

SERVINGS: 9 COOKIES – 3 tablespoons unsalted butter softened – 3 tablespoons brown sugar – 1 tablespoon granulated sugar – 1 egg yolk – 1/4 teaspoon vanilla extract – 1/3 cup all-purpose flour (spooned & leveled) – 1/4 teaspoon baking soda – 1/8 teaspoon salt – 1/2 cup old-fashioned rolled oat – 1/2 cup semisweet chocolate chip

INSTRUCTIONS

Preheat oven to 350°F. Arrange a large baking sheet with parchment or silicone baking mat.

Beat butter, brown sugar, and granulated sugar with a hand-held mixer in a medium bowl until light and fluffy. Add egg yolk and vanilla and mix well, scraping bowl sides as needed.

Mix flour, baking soda, and salt until combined. Then fully incorporate the rolled oats and semi-sweet chocolate chips into the dough.

Two tablespoon-sized pieces of dough should yield 8-9 cookies on the prepared baking sheet.
