INSTRUCTIONS
Preheat oven to 350.Bacon should crisp in a large saucepan in 10 minutes. Drain on paper towels. Remove all but 1 teaspoon bacon fat from pan.

Add onion, salt, and pepper to pan and stir for 8 minutes. Add flour, mix. Pan, add spinach, milk, Greek yogurt, sour cream, and cream cheese. Use a spatula to melt cream cheese.

Keep stirring until creamy. Return bacon to pan and add ¼ cup grated cheese. Mix well.Top the spinach dip in an 8x8 baking dish with the remaining ¼ cup of grated cheese.
