There are oats, fresh strawberries, and mashed bananas in these strawberry banana muffins. They make a great breakfast or afternoon snack.
INGREDIENT
– 1 ½ cups chopped fresh strawberrie– ½ cup plus 2 tablespoons granulated sugar divided use– ¼ cup unsalted butter softened– 2 egg– 1 teaspoon vanilla extract or vanilla bean paste– 2 medium ripe bananas mashed– 1 ½ cups all-purpose flour– ½ cup quick-cooking oat– 1 teaspoon baking powder– ½ teaspoon baking soda– ½ teaspoon salt– Coarse sugar or rolled oats for topping optional

INSTRUCTION
Strawberry and 2 tablespoons sugar in a bowl. Reserve an hour. Keep the juice and berries after draining.Preheat oven to 400°F. Line muffin pans with paper or nonstick spray.

Step 1
Beat remaining sugar and butter until frothy in medium bowl. After beating eggs, add banana and vanilla.Mix flour, oats, baking powder, soda, and salt in a large bowl. Mix dry ingredients with butter and berry juice alternately.

Step 2
Add berries gradually. Fill muffin cups with batter. You can add coarse sugar or rolled oats.Bake muffins until a toothpick inserted into the center comes out clean, 18–20 minutes. Pancool wirerack.
