Lay one zucchini ribbon flat on your cutting board. Place a marinated feta cube on the short end nearest you. Encase the marinated feta by rolling the zucchini ribbon away from you.

Repeat until all zucchini is used.Gently place 3 zucchini-wrapped feta cubes on a small bamboo skewer. (Using two skewers prevents rolling when cooking.)

Lightly coat a grill pan or griddle made of cast iron with a little amount of olive oil. Bring the temperature up to medium-high.

Put the zucchini skewers on the hot surface and cook for a few minutes on each side until they start to brown. Keep rolls on skewers and serve warm.
